
Don Amado Tepeztate Mezcal is made 100% from Tepeztate maguey grown at 4,800' in municipio of Sta. Catarina Minas, Oaxaca. The agave is halved and quartered (cogollo removed) and then earthen roasted for four days using a mix of guamúchil and mesquite wood.
The cooked maguey is then macerated with a proprietary blade spindle destrozadora shredder and fermented together with bagaso in 1,400L pine wood vats using airborne yeast strains. It is double distilled in ceramic pot stills to approximately 53% ABV and reduced with triple distilled demineralized water, with no tails. It is not aged and bottled at 46% ABV.
Aroma: A combination of candied lime, soft white flowers, and vegetal notes of bell pepper and cucumber skin, complemented by hints of nuts, soft pastry, lightly-charred wood, and minerality.
Palate: Grilled lemon and lime, sun-baked white flowers, bell peppers, persimmon, squash blossoms, charred oak, and minerals. The flavors are intricately balanced and offer a deliciously perplexing experience that hints at matcha tea and persists in a delicate fade that savors grilled fruit nuances.
