
The flagship expression of the Real de Minas Distillery, Don Amado Rústico is made using the historical method of slowly roasting fully mature Espadín maguey hearts on firewood embers before natural fermentation with airborne yeast and a slow double-distillation in ceramic pot stills.

Method: This mezcal is made using traditional techniques, with agaves cooked in an in-ground stone-lined pit, crushed by a mix of hand and machine, and open-air fermented in 1000 liter wooden vats with natural ambient yeasts for 8-20 days. The spirit is then double distilled in 100-liter clay stills, resulting in a unique and high-quality mezcal that is true to its origins.
