Don Pilar “El Secreto” is produced in Jalisco, Mexico, made from 100% Blue Weber agave grown in the region’s volcanic soils. The agave is harvested at full maturity and processed through traditional tequila production methods including cooking, fermentation, and double distillation to preserve the spirit’s agave character before aging.
As an Extra Añejo tequila, the spirit is matured for more than three years in oak barrels, the classification required for this elite category. The aging process allows the tequila to absorb complex compounds from the wood while gradually oxidizing and integrating flavors.
Don Pilar’s expression is aged in a combination of French oak and American white oak barrels, including both new and previously used casks. This extended maturation gives the tequila its deep amber color and layered flavor profile—melding the sweetness of cooked agave with the warmth of oak-derived spice and dessert-like richness.
