Cómplice Espadín Cuishe is produced using Agave angustifolia (Maguey Espadín) and Agave karwinskii (Maguey Cuishe) by Mezcalero Ignacio Martínez in San Dionisio Ocotepec, Oaxaca.
After the agaves reach maturity after approximately 8 years and 15 years respectively they are harvested and cooked in a river-stone pit oven. The cooked agaves are crushed by a horse-drawn tahona. After fermenting in oak wood vats, it is double distilled in copper stills.
This mezcal is part of the limited edition Cómplice de Pasión series made from wild agave.
