Cómplice Tobalá is produced using 100% Agave potatorum (Maguey Tobalá) by Mezcalero Ignacio Martínez in San Dionisio Ocotepec, Oaxaca. After the agaves reach maturity after approximately 15 years they are harvested and cooked in a river-stone pit oven.
The cooked agaves are crushed by a horse-drawn tahona. After fermenting in oak wood vats, it is double distilled in copper stills. This mezcal has herbal notes along with citrus and fruit.
This mezcal is part of the limited edition Cómplice de Pasión series made from wild agave.
