Created to mark the 130th anniversary of Casa San Matías, this añejo pays tribute to the distillery's roots by reviving its original tahona process — the same volcanic basalt stone used at the distillery over a century ago is still used to crush the cooked agave today, drawing out sweeter, more aromatic juices than modern mechanical shredders.

Hand-harvested 100% Blue Weber agave is slow-roasted in brick ovens, crushed with the tahona stone, fermented in pine wood vats, and double-distilled in copper pot stills. The spirit is then aged 12 months in American oak barrels, producing a rounded, chocolate-forward añejo with a naturally sweet finish. San Matías Tahona is notably crafted under the direction of a female master distiller — a rarity in the traditionally male-dominated tequila industry.
