Viva Mexico Blanco Madera is a limited-edition expression from Destilería el Ranchito (NOM 1414) in Arandas, Los Altos, Jalisco, crafted by Maestro Tequilero Sergio Cruz. It's made entirely from estate-grown Blue Weber agave matured 6-8 years on the Vivanco family's highland ranchos, then slow-roasted in brick ovens for roughly two days before milling.
The name Madera — Spanish for "wood" — points to the large pine fermentation vats at the heart of this release. Milled agave fiber goes into the vats along with the juice for an extended 8-day open-air fermentation, using the distillery's own propagated wild yeast, deep well water, and a technique the Vivancos call the "Mozart method": playing classical music near the vats during fermentation. Ambient yeasts from the orange, lime, grapefruit, banana, and pomegranate trees planted around the property add another layer of character. The tequila is then double-distilled in copper pot stills and bottled without additives at a robust 54% ABV, earning a 92-point score from VinePair.
