The mosto is open-air fermented for over eight days in wooden vats using native wild yeast and deep well water, then double-distilled in traditional copper pot stills to create an exceptionally rich and expressive tequila.
The nose opens with vibrant aromas of cooked agave, citrus blossom, pear, cinnamon, fresh herbs, and subtle minerality. On the palate, layers of sweet roasted agave are joined by bright citrus, mint, peach, black licorice, eucalyptus, and gentle pepper spice.
